Christmas Dinner for Two

During the Holiday's there are so many nights focused on celebrating with friends, family, coworkers, etc. It's easy to get lost in the shuffle and forget about yourself. This year, I took a night to have a quiet dinner with my boyfriend. Just the two of us.

It's remarkably hard to prepare a holiday inspired dinner for only two people. Here's what I did:

Garlic and Herbs Roasted Chicken stuffed with Saffron Rice
Stewed Green Beans with Tomato
Thyme Roasted Potatoes

I bought a beautiful small chicken from my favourite bucher in Toronto Sanagan's Meat Locker. Picked up the vegetables I needed and headed home to begin preparation. When you're just making a dinner for you and a loved one, it's far more relaxing and fun. There is none of the pressure to please your guests with perfect food. It's also a great way to experiment and try out new recipes. I've never made stuffing and I rarely make whole chicken, so this was a great opportunity to give it a go!

Chicken Rub
3-4 lb whole chicken
6 cloves garlic
2 tbsp grapeseed oil
1/2 tsp herbs de provence
1 tsp dried sage
1 tbsp butter
1 tsp salt

Pull back the skin of the chicken near the neck area and stuffing hole and work the garlic cloves under the skin. Mix the oil, herbs, salt and pepper together in a bowl, rub the chicken with the mixture. Set aside in the fridge.

My chicken came trussed, but if you need instructions on how to truss a chicken for roasting this is a very helpful video.

Chicken- marinating

Chicken Stuffing
2 tbsp butter
1 shallot, finely chopped
1 c brown rice, sautéed
2 c water
1 pinch saffron
1/2 tsp sage
1 tbsp fresh parsley, chopped
1/2 c croutons (3 pieces of bread)
1/2 tsp salt

Melt 1 tbsp of butter in a pot, when the foam begins to apear add in the shallot. Sauté until the shallot begins to soften. Stir in 1 c raw brown rice and sage. Cook for about 2-3 minutes, stirring constantly until rice begins to brown.

Pour in the water, bring to a boil, reduce to a simmer and cook covered for 10 minutes, add the saffron and salt. Continue cooking covered for 15 minutes or until rice is soft.

While the rice is cooking, prepare the croutons. Cut 2 end pieces and 1 middle piece of multigrain wholewheat bread into cubes. Toast cubes in the oven for 5-8 min at 350°F until golden brown.
Place the croutons, chopped parsley, and rice into a bowl and stir to combine. Add pepper to taste. Melt the remaining tablespoon of butter and pour over mixture.
Saffron Rice Chicken Stuffing
Once the stuffing is ready, remove the chicken from the fridge, place on a baking sheet and stuff. Do not over pack the stuffing in the chicken.
Stuffing a Chicken
Melt one tablespoon of butter and pour over the chicken before putting it into the oven.

Roast the chicken in the oven for approximately 2 hours at 350°F. Here is the guide I followed for cooking times.
Oven Roasted Chicken with Garlic and Sage
1 red potato, skin on and chopped
1 yukon gold potato, skin on and chopped
1 tbsp grapeseed oil
1 1/2 tsp fresh thyme
1/2 tsp salt
Roasted Potato's with Thyme
Place your potatoes in a baking dish, drizzle with oil, sprinkle with thyme, salt and pepper and toss. When your chicken has about 30 minutes left, place the potatoes in the oven to cook with it.

Stewed Green Beans with Tomato
2 tbsp butter
1 large tomato, peeled and chopped
2 c green beans, chopped
pinch of salt

When your chicken has about 20 minutes left, melt the butter in a pot. Add the tomato and stew for 5 minutes. Stir in the green beans and continue cooking for 10 minutes. This can be covered and kept on low heat until the rest of the meal is ready.

Carve the chicken, transfer the potatoes and stewed green beans into serving dishes and enjoy!
